Ingredients:
4 Beef tenderloin steaks cut 1 inch thick
2 tsp. coarse grind black pepper
1/2 cup orange marmalade
4 tsp. cider vinegar
1/2 tsp. ground ginger

Directions: Press pepper evenly into both sides of steaks. Place steaks on grid over medium ash-covered coals. Combine marmalade, vinegar and ginger. Brush top of steaks with half of marmalade mixture. Grill steaks 10 to 12 minutes for medium rare to medium, turning once and brushing with remaining marmalade mixture. Serve with potatoes, asparagus and baby carrots. Serves 4
